The white one is Agaricus bisporus, also commonly known as Agaricus bisporus. It is one of the most widely cultivated and highest-yielding edible fungi in the world. It is called the "King of Edible Fungi" because of its white cap, thick flesh, delicate taste and rich nutrition.
Morphological characteristics
It belongs to the phylum Basidiomycetes, order Agaricales, family Agaricus. The mature fruiting body consists of a cap, a stipe, and gills. The cap is hemispherical at first, flattened when mature, 5-12 cm in diameter, and the color ranges from white, cream to light brown (different varieties); the gills are pink at first, and turn dark brown (spore color) when mature; the stipe is thick, white and smooth, and 3-8 cm in length.
Uniqueness: Most basidia produce only 2 spores (instead of 4 for ordinary mushrooms), hence the name "Agaricus bisporus".
By color: white varieties (such as "AS2796", suitable for fresh export), brown varieties (such as "Podora", with stronger flavor and longer storage).
By temperature: low-temperature varieties (suitable for mushroom production at 10-15℃, cultivated in autumn and winter in the north), high-temperature varieties (suitable for 15-22℃, cultivated in summer in the south).
